The Santorini Natural Ferment from Gavalas Winery is a wine from 100% Assyrtiko grapes from 50-year-old vines woven in the island's signature "basket" shape. It is vinified using wild yeasts, which adds an element of character and unpredictability to the wine-making process. The wine-maker has sought to maximize the flavor profile by fermenting the wine for two months, then leaving it to maturate on the lees of the yeast for another 6-8 months. It has a very intense, elegant nose with notes of mango, pineapple and peach in addition to the citric and mineral notes that are typical of Assyrtiko grapes. On the palate it's equally complex: also citric, mineral to the point of seeming buttery, quite saline and bittersweet. The wine has received very good notes from professional wine critics as well as Vivino users.
